🫕🧀 Hot Artichoke Dip

This is one of those recipes that has no business being as good as it is. Mix everything in a bowl, pour it in a dish, bake until bubbly and browned. Serve with crackers and watch it disappear.

Total time: 25 minutes (5 minutes prep, 20 minutes baking)

Steps

1. Mix (5 minutes)

  1. Preheat oven to 350°F.
  2. Combine in a large bowl:
    • 2 cups shredded mozzarella cheese
    • 1 cup grated parmesan
    • 1 cup mayonnaise
    • 2 cups artichoke hearts, drained and chopped (not marinated)
    • A generous dash of garlic powder and parsley powder
    • A pinch of cayenne
  3. Pulse in a food processor until the mixture is a chunky, spreadable consistency, about 8-10 pulses.

2. Bake (20 minutes)

  1. Pour into an 8 or 9 inch ovenproof dish (a quiche dish or ramekin works well).
  2. Dust the top with paprika.
  3. Bake at 350°F for about 20 minutes until golden and bubbly.
  4. Serve hot with crackers.
